Bring to a boil and reduce heat to low.
Cover the pot with foil and simmer, uncovered, for 15 minutes.
Drain and let cool.
To prepare the mustard greens: Place all the ingredients into a food processor.
Blend until smooth.
Spread on a plate or serving platter, sprinkle with salt and serve with tomato and red onion sauce.
