How to make a Spinach and Spinach Soup Recipe
This is a pretty simple recipe for a Spinak and Spinak Soup, which I will be sharing in my next Spinach recipe.
I like to make it ahead of time, but I think it’s perfect for the weeknight meal.
Ingredients 1 cup fresh spinach, washed and rinsed 3 tbsp olive oil 3 cloves garlic, minced 3 tbsp tomato paste 1 tsp dried oregano 1 tsp salt 1 tbsp butter 2 tbsp red wine 1/2 cup water 1/4 cup fresh thyme leaves 1 cup frozen peas, thawed 1 cup chopped fresh basil Directions In a large bowl, whisk together the olive oil, garlic, tomato paste, oreganos, salt, and butter.
In a small bowl, mix together the wine, water, and thyme.
In another bowl, combine the peas, basil, and spinach.
Place the soup bowl on a serving platter.
Spoon the soup into bowls.
Cover with foil and refrigerate for up to 4 hours.
Notes For a better soup, add a little more water or stock to the pot.
For a more filling soup, whisk in the thyme and fresh basil.
For another twist on the Spinach & Spinach, add some frozen peas or chopped fresh thymes.
